So on Saturday I made a Strawberry Cream Pie and it is AWESOME. This is the first pie I've ever made and I'm kind of absurdly proud if it. I think I should call it Kaylee Pie.

2 pounds strawberries
3/4 cup sugar
1 1/4 cups milk
5 tbsps cornstarch
3 tbsps lemon juice
Puree the strawberries in a blender with the lemon juice. Combine the sugar, milk and cornstarch in a decently big saucepan and whisk until everything's dissolved. Pour the strawberries into the milk/sugar/cornstarch mixture and cook on high for 5-8 minutes. Just cook it until you see that it's bubbling a whole lot. Stir it a LOT or it'll stick.
I did the whole premade crust deal. I used a graham cracker crust and it was lovely. After the strawberry mixture has cooled for a bit so it's less bubbling, pour it into the crust. Pop it in the fridge, and you're done!
Leave it in the fridge overnight to set up, and when you're ready to eat it, top with whipped cream and garnish with more strawberries. It's AWESOME, plus your house will smell incredible from cooking the berries.
That recipe came out so well that I'm going to try plugging other fruits into it. This weekend will be Mango-Coconut cream pie!
